Introduction

Being in southern california, I grew up eating tacos. The meat recipe is my dad's, and I have obviously substituted a low-carb tortilla for a regular corn one (though they can be made with corn tortillas for those non-low carbers in the family). Ingredients

    Ground beef, lean, 16 oz
    Chili powder, 3 tbsp
    Cumin seed, 3 tbsp
    Pepper, black, 1 tbsp
    Garlic, 1 tsp
    Pepper, red or cayenne, 1 tsp
    Oregano, ground, 1 tsp
    Onions, raw, 3 tbsp chopped
    low carb tortilla (la tortilla factory, 7 inch), 10 serving

Directions

Dice onion, saute in about a tsp oil. Add garlic and cook with onions about 2 minutes. Add ground beef to pan (this is best done in a cast iron skillet, but anything will do). Cook until beef is browned. Add seasonings and 2 tbsp water to "melt" down spices to evenly coat meat. Turn meat off once spices have evenly been coated.

Serve these as soft or hard tacos with your favorite toppings! (for hard tacos: fill tortilla with a spoonful of meat and fry in hot oil until golden brown and crispy).
