Introduction

This is a super easy and warming lunch or dinner. It's especially lovely during cold weather. This is a super easy and warming lunch or dinner. It's especially lovely during cold weather.
Number of Servings: 4

Ingredients

    1 can chickpeas, rinsed and drained
    1 can diced tomatoes (I use the ones with Italian spices)
    1 small onion, chopped
    2 tsp minced garlic
    1 tbsp olive oil
    2 tsp curry powder
    2 tsp cumin
    1 cup quinoa

Directions

Heat olive oil in skillet. Saute onion until translucent. Add garlic, saute until fragrant. Add chickpeas and tomatoes, curry powder and cumin. Feel free to add a little more curry powder, until it is a lovely orange color. Cook over medium heat, about 10 minutes. Serve over quinoa or brown rice.
