Introduction

This is a great meatless recipe with lots of flavour. It's easy to adapt to smaller amounts but it's so good left over that I usually make the large batch. Number of Servings: 10

Ingredients

    2 - 19oz cans of Chick Peas - drained & rinsed
    3 T of minced garlic or a comparable amount of fresh
    2 T olive oil
    1 bunch of fresh cilantro - chopped (3 T dried basil or even fresh can be substituted
    2 - 28 cans of Crushed tomatoes (low sodium)
    1 can of water
    1pkg (375g) of Macaroni (Blue Menu - PC whole grain)

Directions

Saute chick peas in oil & garlic for 10 minutes. Add the herbs and saute another 5 minutes. Add the crushed tomatoes (if you can't get crushed, put diced in a blender). Add a can of water to thin the mixture down and let it continue to cook on low for about 1 hour. Add salt and pepper to taste. The longer it cooks the more the flavours blend. Just before serving, cook pasta according to package and either add to mixture or add to individual bowls and spoon mixture over. You'll end up with a soupy consistency. Serve with fresh bread and a salad for a low fat, perfectly nutritious meal!
