Introduction

These muffins are huge and delicious! They are 100% whole-wheat and have almost no fat in them. They only have 5 grams of sugar per muffin! Ingredients

    2 cups Whole Wheat Pastry Flour
    1 cup nonfat milk
    2 egg whites
    1 tsp cinnamon
    1 tsp baking soda
    2 tsp baking powder
    1/2 tsp salt
    1/4 cup white sugar
    1/4 cup + 1 TB brown sugar
    6 ounces nonfat plain yogurt
    1 tsp. bourbon vanilla extract
    1 cup fresh blackberries

    Even better with walnuts!

Directions

Preheat oven to 400 degrees.
Mix together dry ingredients in large bowl.
Whisk together wet ingredients in small bowl.
Make well in the center of the dry ingredients.
Pour all contents of small bowl into the well.
Fold gently until the batter is smooth and not lumpy.
Fold in blackberries gently.
Place in oven and bake 15-20 minutes.

    Delicious, and healthy too! What more could you ask for. I used a standard sized ice cream scoop to portion out the mixture, it puts just the right amount in each hole of the muffin pan. - 8/17/09
