Ingredients

    Dressing:
    1 1/2 Tbsp Rice Vinegar
    1 1/2 Tbsp Sugar
    1 Tbsp Soy Sauce
    1 Tsp Asian Sesame Oil
    Dash of Chili Oil
    3 Tablespoons Vegetable Oil

    Salad:
    6 cups of baby spinach
    1 cup of mandarin oranges
    1/4 cup chopped Green Onion (white and green parts)
    2 skinless salmon fillets (6 ounce each)
    2 Tablespoons Hoisin Sauce
    1/4 cup chow mein noodles

Directions

Preheat oven to 450 degrees. Line baking sheet with foil.
To make dressing: Combine vinegar, sugar, soy sauce, sesame oil, chili oil and veggie oil in a jar. Whisk until blended. Refrigerate.
Combine spinach, oranges, onions, in large bowl.
Put the salmon in the center of foil. Spread the top of each fillet with hoisin and wrap foil loosely around the fish, creating a sealed package. Cook until just opague in center ( 8-10 min).
Toss salad with dressing. Divide into two bowls. Top with salmon. Garnish with chow mein noodles.
