1 tbsp extra virgin Olive oil
2 shallots or 0.5 small red onion, finely chopped or sliced
    3 courgettes, thickly sliced
Green Beans (french), 0.5 cup, cut into 2, blanced in boiling water for a minute or two.
    1 clove Garlic, sliced

    2 tbsp Pine kernels
    black pepper
    rocket leaves, 1 cup
    tomatoes, cherry, 1 cup, halved

2. Turn carefully with tongs, then add the garlic and fry for another minute, taking care not to let the garlic burn.

3. Pour over the lemon juice, add the tomatoes, green beans and pine nuts and season with salt and pepper. Lower the heat and fry for another 5 minutes until the courgettes are just tender.
