Introduction
This recipe is adapted from an idea I found in Prevention Magazine. My favorite way to eat it is on Wasa Light Rye crackers - great for a snack or a meal. Ingredients

* 2 6oz cans of Albacore tuna (drained - I used no salt added tuna from Whole Foods)
* 2 Tbsp. olive oil
* 4 Tbsp. lemon juice (I used 1 lemon, freshly squeezed)
* 3 Tbsp. capers (drained)
* 1/3 cup finely chopped red onion
Directions
Mix all ingredients together and serve on bread or Ryecrisp or Wasa crackers. I usually split it into four servings in the mixing bowl and put them into snack baggies to save for the rest of my lunches in the week. Makes for a very tasty and easy mela or snack! Yum!!

I was tired of the traditional tuna w/mayo so thought I'd try this. I am pleasantly surprised ! I used only 2T of capers, and added some finely chopped celery. Thank you for sharing. Definately something I would make again ! - 8/7/09

Thanks. I did notice that the second time I made it the lemons were smaller - definitely tweak if it seems dry - add more oil or lemon juice.
