Introduction

This recipe is adapted from an idea I found in Prevention Magazine. My favorite way to eat it is on Wasa Light Rye crackers - great for a snack or a meal. Number of Servings: 4

Ingredients

    * 2 6oz cans of Albacore tuna (drained - I used no salt added tuna from Whole Foods)
    * 2 Tbsp. olive oil
    * 4 Tbsp. lemon juice (I used 1 lemon, freshly squeezed)
    * 3 Tbsp. capers (drained)
    * 1/3 cup finely chopped red onion

Directions

Mix all ingredients together and serve on bread or Ryecrisp or Wasa crackers. I usually split it into four servings in the mixing bowl and put them into snack baggies to save for the rest of my lunches in the week. Makes for a very tasty and easy mela or snack! Yum!!

    Incredible!
    my son and i loved it. it was delicious and the lemon gave it an excellent pow at every bite. it was easy and quick to make. i will definitely make it again. i did crush the capers so my son wouldn't be picky and he didn't even know they were in there. Tricks of the trade. - 8/13/09

    I was tired of the traditional tuna w/mayo so thought I'd try this. I am pleasantly surprised ! I used only 2T of capers, and added some finely chopped celery. Thank you for sharing. Definately something I would make again ! - 8/7/09

    Thanks. I did notice that the second time I made it the lemons were smaller - definitely tweak if it seems dry - add more oil or lemon juice.
