Introduction

I love this cake for the simplicity of its ingredients and its wonderful chewy texture. Eat it in thin slices and then the calorie and fat count is low. Ingredients

    Butter, unsalted, 1 cup
    Granulated Sugar, 2 cups
    Plum Jam, 2 cups
    Flour, white, 3 cups
    1/2 tsp salt
    2 tsp baking soda

Directions

Preheat oven to 325 F. Lighlty oil a non-stick bundt or tube pan. Cream the butter and sugar, then beat in the jam. Add the dry ingredients and mix into a stiff batter. Bake for 1 hour. Cool 10 minutes, then invert onto a cooling rack. Makes 24 slices.

    The cake itself is very good. Reminds me of a brownie in it's richness. It does need to be cooked for longer than 1 hr. My guess is that it needs 90 minutes or a higher cooking temp. - 10/2/12
