Ingredients

    1 c long grain rice, cooked and left to cool
    2 artichoke hearts, roughly chopped (jarred or canned)
    6 oz light tuna in oil, drained
    1/3 c frozen peas cooked and cooled (I used fresh)
    1 large ripe tomato, diced
    1/4 c cubed fresh mozzarella cheese
    1/4 green bell pepper diced
    2 mushrooms, sliced
    2 T pine nuts, toasted
    2 T flat leaf parsley, chopped
    4 T olive oil
    1.5 T lemon juice
    1 garlic clove chopped
    1 t salt
    1/2 t black pepper

Directions

Mix together the rice, artichoke hearts, tuna, pas, tomato, cheese, bell pepper, mushrooms, pine nuts, and parsley in a bowl. Mix the oil, lemon juice, garlic, salt and pepper in a bowl and whisk until combined. Pour dressing over the rice mix, mix together to combine thoroughly, and serve.
