Ingredients

1 medium onion, chopped
1/2 cup vegetable oil
3/4 cup grated parmesan cheese
4 beaten eggs
1 T parsley
3 cups shredded zucchini
1 cup baking mix / bisquick
1 cup shredded cheddar cheese
Directions
Mix together the onion, vegetable oil, parmesan cheese, eggs, and parsley. Combine with zucchini and cheddar cheese. Pour into 2 - 9 inch cake pans that have been prepared with non-cooking spary. Bake at 350 degrees for about 35 minutes or until golden brown.
