Fiber One Cereal, 1 cup
Egg Beaters, 0.25 cup
Skinny Cow Fat Free Milk, .5 cup
Vegetable Oil, 2 tbsp
Banana, fresh, 3 medium, very ripe
Flour, white, 1.25 cup
Granulated Sugar, .5 cup
Baking Powder, 3 tsp
Cinnamon, ground, 1 tsp
Nutmeg, ground, .25 tsp
Salt, .25 tsp
Cranberries, dried, sweetened .5 cup
Walnuts, .5 cup chopped
Directions
1. Heat oven to 425°F. Grease bottoms only of 18 regular-size muffin cups with shortening or cooking spray, or use paper baking cups. Place cereal in resealable food-storage plastic bag; seal bag and crush with rolling pin or meat mallet (or crush in food processor).
2. In medium bowl, beat egg, milk and oil with fork or wire whisk until well mixed; beat in bananas. Stir in cereal; let stand 5 minutes.
3. Stir in remaining ingredients except cranberries and nuts until blended. Stir in cranberries and nuts. Divide batter evenly among muffin cups. I also like to sprinkle tops with a pinch of granulated sugar before baking.
4. Reduce oven temperature to 400°F. (The initial higher temperature helps the muffins to rise a bit.)Bake 20 to 25 minutes or until light golden brown. Immediately remove from pan to cooling rack. Serve warm.
