Ingredients

    1/2 cup Eggbeaters
    1 can Rotel diced tomatoes with green chiles
    1/4 cup diced onions
    1 teasp. of Worcestershire sauce
    1/4 teasp. Black Pepper
    2 lbs of 93% Lean ground beef
    1 cup of crushed Ritz crackers
    1 cup of Kraft Fat Free Shredded Cheddar Cheese
    1 cup of Mild Salsa
    1 teasp. Salt

Directions

Preheat oven to 350 degrees F. Combine all ingredients except beef and salsa in a large bowl. Mix well and then add beef and re-mix. Press into a 8x8 inch square baking pan sprayed with Pam cooking spray. Bake in preheated oven for 35 minutes. Then remove loaf from oven and drain any excess liquid. Spread a layer of salsa on top of meatloaf and return to oven for about 15 more minutes, or until it is no longer pink in the middle. Remove from oven and enjoy! Makes 6 servings.
