Introduction

Just something I whipped up with what I could find in the fridge :-) Nets about 11.5 g. carbs with almost 6 g fiber!

I actually used the canned whole black olives they're about small/medium size and chopped them up. I used 8 wedges of Roma tomato which should be about equivalent to 4 x 1/4 wedges of a medium tomato.

Ingredients



    * Romaine Lettuce (salad), 2 cup, shredded
    * Walnuts, .0312 cup, chopped OPTIONAL
    * Green Peppers (bell peppers), 0.33 cup, chopped
    * Black Olives, 4 jumbo
    * Red Ripe Tomatoes, 6 wedge (1/4 of medium tomato)
    * Garlic & Herb Feta (Athenos), 0.125 cup
    * Chef's Review Mediteranean Style Italian Dressing (1 serving = 2 tbsp.), 1 serving
    * Red Onion - 1 tbsp chopped

Directions

Chop up onions, bell peppers, tomatoes and olives.

Put 2 cups romaine (you can substitute mixed green if you prefer just rerun the nutrition info on it) and pour ingredients one at a time on top.

Add 2 tbsp feta, 2 tbsp dressing and top with 1 tbsp walnuts (optional).
