Introduction

I had some overripe bananas and mangos so I made this for breakfast. Not very light but very healthy and filling! I had some overripe bananas and mangos so I made this for breakfast. Not very light but very healthy and filling!

Ingredients

    Flour, white, 2 cup
    Brown Sugar, .25 cup, packed
    Salt, .5 tsp
    Baking Powder, 3 tsp
    Raisins, 2 small box (1.5 oz)
    Banana, fresh, 3 medium (7" to 7-7/8" long)
    Milk, 2%, 1 cup
    Canola Oil, .25 cup
    Honey, .25 cup
    Vanilla Essence 1Tbl, 1 serving
    Mangos, 1 fruit without refuse

Directions

Mix all the dry ingredients in one bowl including the raisins. Mix all the wet ingredients in another including mango and banana. I use a hand blender. It is better if the fruit is very ripe. Then mix the wet and dry ingredients together. A few strokes make sure it remains lumpy. I made one loaf and 12 muffins from this recipe. Bake it in a 400 F oven for 20-25 minutes. Let itrest for 5 to 10 minutes
