Ingredients

3 fresh eggs
1 bell pepper (any colour) - chopped
100g reduce salt thin deli turkey breast slices
Directions
This will make three 2-basket servings.
Preheat oven to 350.
Spray a muffin tin with a non-stick calorie reduce spray.
Line 6 cups of a muffin tin with the turkey slices, arranging them to form baskets in each cup.
Put muffin tin in oven for 15 minutes until turkey is slightly hardened.
Meanwhile, beat the eggs, and add the chopped bell pepper.
When the turkey is done, spoon the egg and pepper mix into the turkey baskets.
Put the muffin tin back in the oven for 30 minutes or until the eggs have cooked.
Remove from oven and let cool.
If you are not eating them immediately, seal in a container and put in the fridge. Microwave them for 30 seconds to heat them up again.
