Ingredients

-14 oz. box of whole wheat pasta (such as Barilla Whole Grain Penne)
- 1 1/2 lbs. boneless skinless chicken breasts (cut into 6 4 oz. servings)
-2 Tbs. Cajun seasoning, divided
-2 Tbs. light butter or margarine (such as Smart Balance Light), divided
-1 1/4 c. fat free half and half
-1 Tbs. cornstarch dissolved in water
-3 green onions sliced thinly (white and green parts)
-3 Tbs. finely chopped sundried tomatoes
-2 cloves minced garlic
-1/4 tsp. pepper
-3/4 tsp. dried basil
Directions
Makes 6 4 oz. chicken breasts and 7 1 cup servings of pasta.
1. Cook pasta according to package directions.
2. Season both sides of chicken with 1 Tbs. of Cajun seasoning.
3. Melt 1 Tbs. of butter in 10 in. skillet over med-high heat. Sear chicken breasts until browned on both sides. Cover and cook through. Remove chicken from pan and keep warm.
4. Melt remaining 1 Tbs. of butter in the same pan. Saute onion, garlic, and tomatoes for 1-2 minutes. Turn heat to low. Pour in the half and half. Add cornstarch, pepper, and basil. Heat through, do not boil.
5. Combine sauce and pasta. Serve chicken breasts on top.
