Introduction

easy ground beef mix over cornbread crust and topped with cheese. easy ground beef mix over cornbread crust and topped with cheese.

Ingredients

    Cornbread mix
    1 egg
    milk
    1 lb ground beef
    2/3 c. Market Day Baja Corn Blend/ or Mexicorn
    1 c shredded mexican blend cheese
    1 small can diced tomatoes
    1 sm can tomato sauce
    1 T chili powder

Directions

Combine jiffy mix, egg, milk , and 1/2 c of cheese and spread in a greased 8x11 pan.
Brown ground beef and drain. Add remaining ingredients, except cheese. Put ground beef mix on top of crnbread mix.
Bake at 400 degrees for 20-25 minutes or until bubbly. Top with remaining 1/2 c cheese and bake for 5 minutes. Let cool for a few minutes to make cutting easier.
