Number of Servings: 10

Ingredients

    1 can shoepeg corn (11-12oz) or Sweet Corn
    1 can blackeye peas (rinse and drain)
    1 avocado, chopped
    2 roma tomatoes, chopped (or as much as you want)
    2/3 cup cilantro, chopped
    2/3 cup green onion, chopped

    Dressing:
    1/4 cup olive oil
    1/4 cup red wine vinegar
    2 garlic cloves (or more to taste)
    3/4 tsp. salt
    1/8 tsp. pepper
    1 tsp. cumin

Directions

Chop the ingredients. Blend the dressing and pour over ingredients. Serve with tortilla chips.

    Love this! However, I love cilantro... most people I know either love or hate it, and it is a bit pronounced in the dish. Love the name, also! Oh, I used garlic powder since I didn't have fresh on hand, but still it was delicious! - 8/21/09

    I agree. It's a great dip substitute, but If you aren't a huge fan of cilantro, I would recomend 1/3 c or possibly less depending on your tastes. Other that that, I love this recipe!!! - 2/5/10
