Introduction

Using light cheese lowers the fat considerably in this recipe. I sometimes do this with fried onions, garlic and mushrooms through the sauce - yum! Also, a dash of mustard powder when making the roux is nice. Using light cheese lowers the fat considerably in this recipe. Ingredients

    Ingredients:
    Olive Oil,1 tbsp
*Organic All-Purpose White Flour, 2 tbl (0.125 cup)
    Milk, 2%, 1 cup
    Cheddar Cheese, 80 grams
    Salt, .5 tsp
    Pepper, black, 2 dash
    pasta shells, organic - woolworths(100g=1serve), 1.5 serving

Directions

Boil pasta as per directions, rinse and drain. Mix oil and flour over heat into a roux and add milk slowly to thicken into a white sauce (about 7 - 10 mins with constant stirring). When thick, add cheese, cooked pasta and salt pepepr to taste.

You can do the traditional oven bake with an extra smattering of cheese, but I don't bother. It's nice as is!
