Ingredients

# Boca Meatless Ground Crumbles, 2-12 oz pkgs
# Onions, raw, 1 large, chopped
# Garlic, 4 cloves, chopped
# *La Victoria Green Chile Enchilada Sauce 2 10 oz cans
# *1 can Old El Paso Fat Free Refried Beans
# *Cabot Cheese Low Fat Pepper Jack, 10 oz
# *La Autentica White Corn Tortillas, 12 tortillas
Directions
In a large skillet cook the Boca Crumbles with the onions and the garlic.
When the crumbles and onions are cooked through add 1 can of the green enchilada sauce.
In a 9 x 13 baking dish that has been lightly sprayed with cooking oil add a thin layer of green enchilada sauce.
Add a layer of three tortillas (cut to fit if needed).
Add a layer of 1/3 of the refried beans.
Add of layer of 1/3 of the meat mixture.
Add a layer of 1/4 of the shredded cheese.
Continue to layer in the same manner for 2 more complete layers.
Finish with a layer of 4 tortillas (cut to fit if needed).
Top with the remaining green enchilada sauce and shredded cheese.
Bake in a 350 oven for about 30 minutes or until the cheese is melted and the casserole is heated through.
Makes 8 portions.
