Ingredients

1 regular or small head of cauliflour
1/2 cup fat free cheddar cheese (already shredded)
1 tbsp of light mayo
1 tsp prepared horseradish
salt and pepper to taste
Directions
Remove leaves from cauliflour head, cutting out the core.
Break into florets. Do not cook directly in water as this will make the dish watery.
Mix the mayo and horseradish together.
Once the cauliflour is fork tender done, put into a food processor and blend until smooth.
Add the cheese and mayo mixture and blend. Once the blending is complete salt and pepper to taste. Makes 3-4 1/2 cup servings.
