Ingredients

1/4 C olive oil
1 tsp sea salt
3 C celery, thinly sliced or shredded
1 can bean sprouts, drained (about 14 oz)
1 can water chestnuts, drained (about 4 oz)
1 carrot, minced
1 C broccoli, chopped
1 C mushrooms, sliced
2 C chicken stock, chicken broth, or vegetable stock
2 1/2 tsp cornstarch
1/4 C soy sauce
2 C chicken, cooked and cubed (no skin, no bone)
Rice or chow mein noodles
Directions
Heat oil, salt and pepper over medium heat in a large (deep) skillet.
Add celery, bean sprouts, water chestnuts, carrot, broccoli, and mushrooms. Cover and cook for about 5 minutes, stirring occassionally.
Stir in chicken stock, cook uncovered about 10 minutes.
In speparate bowl, mix soy sauce and cornstarch until completely blended. Add to vegetables and stir until mixture thickens.
Add meat and heat through (about 5 - 10 minutes).
Serves 4
Serving options:
Serve over hot rice or chow mein noodles, or top with crispy chow mein noodles.
