It is easy to change up the flavors and calories by substituting the ground beef for other ground meats like chicken, pork, shrimp, or textured vegetable protein. 1 block extra firm light tofu, small dice
1 pound lean ground beef (or other ground meat) 91% lean
8 oz mushrooms, small dice
8 oz water chestnuts, small dice
1 tbs. canola oil
1 tbs. Hoisin Sauce
1-2 tbs. Tamari or soy sauce
1 tsp fresh grated ginger
2 garlic cloves minced
1 tsp Sriracha or hot chili paste
1 tbs. teriyaki sauce
1 tbs. rice vinegar
1 tsp beef base
2 heads Butter lettuce, leaves separated
Toppings
Sriracha
1 shredded carrot
1 bunch julienned scallions
1 cup chopped unsalted peanuts
1 bunch cilantro, roughly chopped
1 bunch radishes, shredded
Directions
Prepare all ingredients and toppings before beginning cooking.
In a small bowl combine hoisin, tamari, ginger, sriracha, garlic, teriyaki, vinegar, and beef base together until well blended. Set aside.
Heat a large skillet to high heat, add oil, add diced tofu and sauté. Add 1-2 tbs. of sauce above after approximately 1-3 minutes of sautéing. Reduce heat to medium high heat.
Once tofu has browned, add diced mushrooms and sauté until softened.
Add beef to skillet and brown about halfway through making sure to break up beef well
Add remaining sauce with water chestnuts and finish browning the beef.
Serve with lettuce and toppings in separate containers and let people make their own wraps. Wrap mixture can be served hot or cold.
May be served with steamed rice or pickled vegetables
