Ingredients

8 very ripe tomatoes, chopped
2 cups green beans
1 cup chopped onion
1 cup chopped carrots (or baby carrots)
1 cup fresh spinach
1 tbsp fresh cilantro
2 tsp chopped garlic
1 package frozen mixed veggies
Directions
Throw all ingredients together into crockpot. Cover with water, set on low & let simmer through the day. Add water as desired to thin - I leave it thicker & serve up as a veggie stew.
