Introduction

Ingredients

    Crust:
    2 1/4 cups whole wheat flour
    3/4 tsp salt
    1/2 cup canola oil, well chilled
    1 tbsp/15g butter or margarine, well chilled
    5 -6 tbsp cold water

    Filling:
    4 medium size Leeks, cleaned and sliced.
    4 cloves of Garlic, chopped.
    1 tbsp Olive oil.
    1 tbsp Lemon Pepper seasoning.

Directions

Crust:
1. Put flour and salt into mixer bowl. Attach bowl and flat beater. Turn to Stir Speed and mix about 15 seconds. Cut butter into pieces and add with the oil to flour mixture. Turn to Stir Speed and mix 30 to 45 seconds, until particles are size of small peas.

2. Continuing on Stir Speed, add water, a tablespoon at a time, until all particles are moistened and dough begins to hold together.

3. Pat dough into smooth ball, flatten slightly and wrap in plastic wrap. Chill in refrigerator 15 minutes.

4. Add olive oil to large skillet over high heat. Add garlic and then sliced leeks. Season with Lemon Pepper.

5. Sautee for 5 minutes. Turn heat to medium low and cook until the leeks turn golden on the edges. Turn heat off.

6. Roll the crust to 1/8 inch thickness. Fold pastry into quarters; ease into oven sheet and unfold, pressing firmly against bottom. Crust should extend past edges of sheet. I use a 12 in round cookie sheet.

7. Place filling in middle of crust and distribute evenly. Fold the edges of crust in and stretch until covering the filling. Use moistened fingers to seal the crust completely.

8. Cook in oven at 375 degrees for 45 min. Enjoy hot or cold.
