Ingredients

    1 tablespoon finely chopped shallots or onion
    3 cloves, minced
    1/2 tablespoon extra virgin olive oil
    1 cup quinoa, rinsed and drained
    1 1/2 cups low-sodium chicken broth
    1/4 teaspoon dried thyme
    1 bay leaf
    1/4 cup chopped pecans, lightly toasted

Directions

In a large saucepot heat olive oil over medium heat; add shallots and garlic and cook until tender. Stir in quinoa and cook about 5 minutes until quinoa is golden brown. Stir in broth, thyme, and bay leaf. Bring to a boil, then cover and reduce heat to a simmer for 20 minutes, until quinoa is tender and fluffy. Remove bay leaf. Stir in toasted pecans. Season with salt and pepper.

    This was awesome! The only thing we did different was that we reduced the cook time on the quinoa to 15 minutes and we left the lid partially ajar (we read it makes for fluffier quinoa - seemed to work!). It was a wonderful side dish with our dinner... saved as a favorite. WILL make again! - 1/16/10

    Good
    I found that when the quinoa was toasted first it made it difficult to cook it until it was completely fluffy. I like the flavors in this dish but prefer my quinoa on the lighter side. - 1/10/10
