Ingredients

1 Package (12 oz) corn tortillas
1 onion finely chopped (1cup)
1 TBSP olive oil
2 cans (4oz) diced, roasted mild green chilis, drained
2 cans (103/4 oz) 98% fat-free cream of chicken soup
2 pounds chicken breast
1 pound Velveeta cheese made with 2%milk
1/2---1 can rotel (depending on how hot you want it)
Directions
Preheat oven to 350. Place chicken in deep pan cover with water and simmer 20-25 minutes, until cooked.
Meanwhile, heat olive oil in skillet and cook onion until tendor.
Cut tortillas into strips (1/2 in wide and 2-3 inches long).
Empty soup cans into large mixing bowl. Add 1/2 can water drained green chilis, rotel and cooked onions. Set aside.
Cut cheese into small pieces. When chicken is cooked, remove from water and let cool When coll enough to handle cut in 1 inch pieces.
Spray 13x8 1/2 inch baking dish with nonstick spray. Place 1/3 of tortillas strips in bottom to make an even layer. Add 1/3 Chicken for next layer, than add 1/3 cheese then 1/3 soup mix. Repeat two more times.
Bake at 350 for 25-30 minutes.
