Ingredients

4 cups of cut broccoli
2 c. cooked diced medium red potatoes
1 cup fresh corn
1 diced medium onion
2 Tbs. minced garlic
1/2 stick of light margarine
cooking spray
1/4 cup of corn starch
2 diced cooked chicken breast
1 1/2 cups of 1% milk
1 cup fat free sour cream
4 cups of low sodium chicken broth
1 Tsp. black pepper
1/2 tsp. Morton Lite Salt
Directions
Use a large cooking pot. Melt your margarine in the pot with cooking spray to keep the margarine from burning. Add the diced onions and cook till clear. Set aside and mix together the corn starch and milk until the ingredients are thoroughly blended. Add the sour cream, pepper and salt. Add ingredients you have mixed to the onion and margarine. Cook over low heat as you add the broccoli, potatoes and corn. After adding vegetables, stir, cook over medium heat. Stir often. Cook for 30 mins. Makes 8 - 10 servings.
