Introduction

I make this all the time as my hubby is diabetic. I make this all the time as my hubby is diabetic.
Number of Servings: 12

Ingredients

    1 cup splenda (or you can substitute 1/2 c of honey and decrease milk to 2 tbsp)
    1 cup mashed banana (approx 2 or 3 bananas)
    1/2 cup smart margarine
    1/4 cup milk
    1 tsp vanilla extract
    2 eggs
    1 c unbleached white flour
    1 c whole wheat flour
    1 tsp baking soda
    1 tsp sea salt

Directions

Heat oven to 350.
Grease (not oil) bottom only of 9x5 loaf pan or dish.
In large bowl, blend first 6 ingredients, beat for 1 minute at med speed.
Stir in remaining ingredients just until dry ingredients are moistened.
Pour batter into prepared pan/dish.
Bake at 350 for 55-60 mins (may have to cook longer depends on your oven) or until toothpick inserted in center comes out clean.
Cool 5 minutes, remove from pan and cool completely before slicing.
