Salad SaladNumber of Servings: 10
Ingredients

1/2 cup olive oil-divided
2 large cloves garlic-minced
5 jalapeno peppers-minced
2 teaspoons ground cumin
1 teaspoon oregano
3 cups frozen corn
1/2 cup water
1 teaspoon salt
1 1/2 cup frozen peas
2 cans black beans-rinsed
2 tomatoes-chopped
1/2 cup green onions-sliced
1/2 cup
Directions
Heat 2 table spoons of Olive Oil
Add Garlic, Jalpenos, Cumin, and Oregano
Saute 30 seconds
Add Corn and Water
Cook 2 minutes
Add salt
Remove from heat and place in bowl
Cook Peas 3 minutes
Remove and place in bowl with corn
Add Black Beans, Tomatoes,
Green onions, and Cilantro
Whisk Mustard, Pepper, Lemon Juice and Remaining Olive Oil. Pour over Salad and chill for 1 hour.
