Ingredients
-
egg beaters - 1 3/4 cup (small carton)
can of black beans
container of fresh mushrooms
fresh spinach
olive oil
quinoa - 1 cup
salt/pepper/garlic/basil to taste
Directions
Start the Quinoa:
Combine 1 cup quinoa and 2 cups water...bring to boil and then reduce to simmer, cover and let cook for 15 minutes.
While that is going saute spinach and mushrooms in a skillet with olive oil. As it's cooking mix in some garlic salt and pepper.
Then microwave about 1 3/4 cup egg beaters (small carton size) for 3 minutes. Take it out and stir, cook for another 2-3 minutes. Take a fork and stir it chopping it up into little pieces. Mix in the sauteed spinach and mushrooms. Transfer to a larger bowl.
Once the quinoa is finished, fluff with fork and let cool for a few minutes. Drain/rinse a can of black beans and mix that in with the egg mixture. Finally mix in the quinoa. Add salt and pepper and any other seasoning you like...I added some basil at the end.
This makes 4 BIG servings
