Introduction

Easy, simple, yummy, high protein, low cal (relatively), though freaky high sodium. Need to try to bring that down somehow. Easy, simple, yummy, high protein, low cal (relatively), though freaky high sodium. Need to try to bring that down somehow.

Ingredients

    2 tbsp extra virgin olive oil
    1/2 diced onion
    8 Veggie Dogs, chopped into 1/2" pieces
    1 28-oz can Vegetarian Baked Beans
    2 tsp Mustard
    1 package cornbread mix
    milk/egg or substitutes as required by cornbread mix

Directions

Cook onion in oil in a pot until translucent. Add can of beans, hot dogs, and mustard. Let cook over medium ehat 10-15 minutes until bubbly. Prepare cornbread mix batter according to package directions. Spray a 9 x 9 pan with cooking spray. Pour the bean mixture in. Top with the cornbread batter. Cook in 350 deg oven 30 min or until cornbread mix is slightly browned.
