Introduction
I've been looking for a somewhat healthy substitute for ooey-gooey nachos, and this is it! So delicious with tortilla chips, but I'm sure it would be equally delicious as a vegetable dip as well. And it is super filling too! I realize the sodium is a bit high - this isn't an every day kind of food - but it sure is delicious, and a lot better for you than fast food! Ingredients

1/2 Morningstar Farms Spicy Black Bean Burger
1 wedge Laughing Cow Light Swiss Original Cheese
1/4 cup salsa (I use medium because I like it spicier)
2 tbsp. chopped green onions
Directions
Cook a whole black bean burger in the microwave for one minute. Let it cool for a couple of minutes and then halve it (and save one half in the fridge for later!). Take the second half and chop finely.
Mix together all ingredients in a microwave-safe bowl, making sure to chunk up the cheese a bit so it melts easier. Microwave on high for 30 seconds, stir, and microwave for another 30 seconds and stir.
Makes one huge serving. Enjoy!
