Introduction
This goes well with pork roast for a different side dish. It takes awhile to cook, but not a lot of work. Perfect for a Sunday afternoon while watching football. Ingredients

1/2 lb dried black beans, soaked overnight
1 medium onion, roughly chopped
3 fresh garlic cloves, pressed
1/2 tsp dried oregano leaves
1/2 tsp ground cumin
pinch of red pepper flakes
2 tsp sugar
2 Tbs white wine vinegar
salt and pepper to taste
chopped scallions for garnish
Directions
Rinse beans that have soaked. Cover with 3 cups of fresh water and bring to a boil over high heat. Reduce the heat and simmer covered for 30 minutes. Skim off any foam. Stir in the onion and simmer 30 minutes more. Add the garlic oregano, cumin, and red pepper flakes, and simmer uncovered for 30 minutes more, stirring ocassionally. Stir in sugar and vinegar and taste. Season with salt and pepper to taste and garnish with chopped scallions.
