Introduction

I love crispy foods, but chips are out of the question. I especially love crunchy Mexican food, but have avoided it because of the high fat and high calories. However, after trying a flatbread pizza recipe that was fantastic, the crunchy texture of the toasted bread, made me think of a tostada. I love crispy foods, but chips are out of the question. Ingredients

    1 Flatout Flatbread with Flax
    1/2 cup of no fat refried beans
    1 oz. of low fat shredded Mexican cheese
    1 cup of shreded lettuce
    2 tbsp. of salsa

Directions

Heat a cookie sheet for a few minutes in a 450 degree oven. Place the flatbread on the cookie sheet and toast on one side for a few minutes, and then flip it for a few minutes on the other side until the bread is stiff and crispy. Spread warm (microwaved) refried beans over the entire flatbread and cover with shredded cheese. Drizzle salsa over the top, and then top with shredded lettuce. Other toppings could be added: avocado, corn, taco sauce, sour cream. This is a very large and filling dish. Serves one satisfied person!
