Introduction

Number of Servings: 6

Ingredients

    3 medium leeks, white parts only, 1/4" slices
    2 potatoes, 1" dice
    15 cremini mushrooms, sliced
    5 c. chicken stock
    3 shallots, minced
    3 garlic cloves, minced
    2 T. butter
    salt
    pepper
    1 c. milk
    4 oz dry sherry

Directions

Melt butter over low in a large stock pot.
Soften garlic and shallots.
Add potatoes and leek. Cook 10 minutes, uncovered, stirring occasionally.
Add stock and seasoning. Bring to a boil.
Add mushrooms and reduce heat to simmer until potato is tender (about 15 minutes)
Blend until smooth (I use a stick blender)
Add milk, adjust seasoning.
Finish with sherry

Excellent served with croutons.
Makes approx. 6 1 c. servings
