Ingredients

I cup uncooked Quinoa
1 cup cubed Kohlrabi
1/2 cup cubed red bell peppers
1 cup cubed cucumber
1 cup chopped white onion
1/2 cup chopped cilantro
10 T (approx, or to taste) Good Seasons Zesty Italian Dressing. (I use Rice vinegar in larger proportion to normal recipe and about 3 T of olive oil (my recipe is in SparkRecipes)
Directions
Use 2 cups water to 1 cup of Quinoa. Get water boiling, then add Quinoa then cook on simmer, covered, for 15 minutes. Cool Quinoa, then add cubed cucumber, kohlrabi, red peppers, onions and cilantro. Add Good Season's Zesty Italian Dressing to taste. Stir, cool and serve.
