Ingredients

10-12 oz raw shelled Shrimp
4 tsp minced Ginger Root,
3 cloves minced Garlic, 3 cloves
1 tbsp Hoisin Sauce
Salt & Pepper to taste (about 1 tsp each)
1/4 chopped raw Scallions, raw
2 Whole Wheat or Multi-grain Hamburger Buns (you could a pita, or a La Tortilla Factory wrap as well)
4 cups mixed salad greens,
Broccoli, fresh, 1 cup, chopped
Asparagus, fresh, 12 spears,
Directions
Peel and shell shrimp and mince finely.
Add shrimp to a bowl, add the panko bread crums, salt and pepper, minced ginger, garlic, and chopped shallots. Add 2 tbsp of the Hoisin sauce and mix well.
Form 4 patties and add to a pre-heated non stick skillet. Cook until cooked thru (patties will be nice and pink. To prevent overcooking, add a little bit of water to the bottom of the pan and cover (essentially steaming) the patties.
Serve on buns, 1 patty, brush with remaining hoisin sauce, and top with second patty. Add side salad with broccoli and asparagus and your favorite fat free dressing on the side.
