Ingredients
-
1 cup oats
2 scoops vanilla protein powder (I use soy, but any will do)
1 medium - large carrot, grated
1 heaped tbsp sultanas/raisins (naturally dried & organic)
1 heaped tbsp flaxmeal
1 tbsp organic maple syrup
1/4 tsp vanilla extract
1/2 tsp cinnamon
1 dash nutmeg
1.5 cups boiling water infused with cinnamon & apple herbal tea bag
Directions
Combine all ingredients in a bowl and mix together.
The batter should be thick and form a dense ball ( you may need to add more or less water depending on the type of protein powder you are using).
Transfer to a lightly greased (spray with canola oil spray) 8x8'' baking dish. Smooth batter evenly into dish.
Bake at 180 degrees celsius (356 degrees fahrenheit) for 35 - 45 minutes (or when inserted toothpick comes out clean). It should be a lovely golden brown on top.
Cool and cut into 16 pieces.
Enjoy with a nice cup of tea or coffee!
