Introduction
I slightly modified my Grandmother's bread pudding recipe. I reduced the amount of sugar and it is still a sweet dessert. I think I could reduce the sugar even more. I also eat only wheat bread anymore, so I use this recipe when I have 5 or 6 crusts getting stale. Stale bread works best in bread pudding, and I don't feel like I'm wasting anything. Ingredients

4 cups nonfat milk
4 eggs
dash of salt (optional - I don't)
1 cup sugar
4-6 slices stale wheat bread
1 tsp vanilla extract
1/2 tsp nutmeg (to taste)
Directions
Mix all ingredients except bread until eggs are fully incorporated. Break the stale bread into a 2 qt casserole dish and cover with the liquid mixture. Make sure all the bread gets soaked. Bake at 350 for 75 minutes or until a knife inserted near the center comes out clean.
It will deflate as it cools. I cook mine in a rectangular pan and cut it into 10 servings as soon as its cool enough. I package each serving into gladware and it keeps in the fridge for about 10 days. I don't know if it can be frozen.
