Introduction

We had these fabulous energy bars at the Red Mounotain Spa in Utah. This is my best attempt to date to replicate them. Not exact but getting closer. We had these fabulous energy bars at the Red Mounotain Spa in Utah. This is my best attempt to date to replicate them. Not exact but getting closer.
Number of Servings: 30

Ingredients

    1 lb. pitted dates
    12 oz dried figs
    12 oz raisins
    4 oz cashew pieces
    1/2 c. toasted sunflower seeds
    1 cup sesame seeds
    1 cup oats
    1 cup natural peanut butter
    1/4 - 1/2 cup honey (haven't decided yet)

Directions

Makes 30 bars. Mix all ingredients except peanut butter and honey in food processor. May need to do it in batches if your processor isn't heavy duty. Bring the honey to a boil then reduce heat and simmer 8 minutes. Add PB and honey after the ingredients are well chopped and combines. Press the mix onto parchment paper in a jelly roll pan using the pan to help you press out 1/2 inch deep bars. Chill and then cut into bars and wrap individually.
