Introduction

Tilapia filets topped with a parmesan cheese based mix then baked or broiled. Tilapia filets topped with a parmesan cheese based mix then baked or broiled.
Number of Servings: 4

Ingredients

    2 lbs tilapia filets
    1 lemon
    1/2 c fresh shredded parmesan (I use Sargento Artisan)
    4 tbsp butter softened
    3 tbsp mayonnaise (I use Kewpie Japanese mayo!)
    3 tbsp chopped scallions
    Creole / Emeril Bayou Blend seasoning to taste
    fresh ground pepper
    1 healthy dash hot sauce (I used Cholula.)

Directions

1. Preheat oven to 350 degrees.

2. Arrange fish filets in single layer in 13 x 9 pan.

3. Cut lemon in half, pop seeds into trash, then squeeze out all juice from both halves evenly over fish filets.

4. Place fish in oven and set timer for 15 minutes.

5. While fish cooks, combine cheese, mayo, butter, onions and seasonings in a small bowl.

6. When oven timer goes off or fish has just begun to flake, take the pan out and spread the fish with the cheese mixture (Carefully! Pan will obviously be hot.)

7. Place pan back in oven for another 5 minutes or so until it starts to turn golden brown but do not overcook. Broiling for the last 5 minutes is also a nice option.

This can probably be lightened up using less butter or by using margarine instead. Using a lighter mayo is also an option. Compare stats on parmesan cheeses as well. These are simply my favorite combo listed above.
