Number of Servings: 6

Ingredients

    # Tilapia filet, 6-3 oz fillets
    # Sun Dried Tomatoes, .75 cup
    # Red Ripe Tomatoes, 2 cup, chopped
    # *Athenos Reduced Fat Feta Cheese, crumbled 4 oz
    # Kalamata, Green Olives, pitted, 3 oz chopped
    # White Wine, 2 fl oz
    # Olive Oil, 1 tbsp

Directions

Heat oil in large skillet on medium high
Add fish to skillet and sear on both sides
(Add a little water if you need to keep fish from sticking)
Add tomatoes, olives and feta on top of fish
Add wine
Reduce heat to medium low and cover for 15 minutes, making sure there is always a little juice

Serve over rice. Makes 6 servings.
