Introduction

One of my husband's favorite soups - great lunch with home made bread and butter. One of my husband's favorite soups - great lunch with home made bread and butter.
Number of Servings: 21

Ingredients

    About 4 pounds of potatoes finely chopped or shredded
    2 cups finely chopped or shredded carrots
    2 cups chopped onions
    about 12 hot dogs cut into bite sized pieces - Hebrew National taste best
    fresh or dried parsley - to taste
    salt/pepper to taste

Directions

Peel and chop or shred about 4 pounds of potatoes - a five pound bag when peeled, eyes and bad spots are removed yield about 4 pounds shredded potatoes.
Add shredded potatoes to about 1 gallon of filtered tap water.
Bring to a boil; then lower heat to simmer.
Add 2 cups of shredded carrots and 2 cups of chopped onions.
Simmer, stirring occasionally to prevent sticking or burning for about 2 hours or until vegetables are very soft. About 10 minutes before serving add bite sized hot dogs and parsley.
Makes about 21 1 1/2 cup servings

    Very Good
    My mom made this for us kids when we were growing up! She just cubed the potatoes and sliced the carrots. She also sauteed the onions until they were caramelized and then added them to the soup. I always loved the hot dogs in it and called it tater dog soup. - 4/12/10
