Introduction
You can have your cake and eat it too. This is a yummy loaded potato dish and the only "diet" food is the butter. At just over 200 calories it is a wonderful comfort food and goes excellent with my 4 ounce filet mignon with no bacon. You can have your cake and eat it too. Ingredients

1 lb. diced raw potatoes (golden or red do better but white will do.
4 tbsp sour cream
1 tbsp hormel bacon bits
2 oz pepper jack cheese
2 tbsp I can't believe it's not butter, light spread
4 tbsp diced onion (if you wish)deduct 4 calories each serving if you don't
Directions
I have 4 small "dessert" bowls that I use for this dish, your choice. Place 1/4 pound diced potatoes, skin on or off your preference ( I leave skin on). Top with 2 tsp butter, 1 tbls onion, 1/2 ounce cheese, in that order in each individual bowl. Bake 40 minutes or until done at 350 degrees. Top with 1 tbsp sour cream and 1/4 tsp bacon bits In each individual bowl. You can do this in a casserole dish and have the same results. I just find the individual dishes prettier and more convenient. No dipping out, no measuring after hot. And your family thinks you are being oh so fancy like the restaurants.
*You can lower the calories even more by using fat free sour cream, fat free cheese* The calorie count would then be approximately 163. Enjoy!
