Ingredients

    2 cans Black Beans; rinsed/drained
    7 oz. Lite Smoked Sausage
    1 can Canned Tomatoes (no salt)
    1 cup Onions, raw; chopped
    1 cup Green Peppers; chopped
    1 tsp minced Garlic
    1 (4oz) can chopped green chilies; drained/rinsed
    1 tbsp Olive Oil
    1 tbsp Cider Vinegar
    2 tsp black pepper
    0.25 tsp cayenne pepper

Directions

Cut sausage into slices; cut slices in half.

Cook garlic & chopped veggies in olive oil until onions are translucent. Add sausage, beans tomatoes, chilies & vinegar, and pepper. Heat through (10-15 minutes on medium heat), and serve.

    My son cannot eat spicy food, so I omitted the green chilies and cayenne pepper and served it over brown rice. Delicious! - 7/7/10

    tasty dish. beware it is spicy, but i love spicy food. the only complaint is the sodium content. definitely use no/low salt alternatives whenever possible. - 7/2/09

    Excellent recipe! I love spicy food but this was a tad bit spicy. Next time, I'll use 1/2 tsp. cayenne pepper. - 5/22/09
