Ingredients

    consistency should be like a thin vegetable soup


    * Cumin seed, 3 tbsp (remove)
    * Pepper, red or cayenne, 1 tsp (remove)
    * Turmeric, ground, 1 tsp (remove)
    * Canola Oil, 1 tbsp (remove)
    * Cauliflower, raw, 1 head, large (6-7" dia) (remove)
    * Peas, frozen, 2 cup (remove)
    * Potato, raw, 2 large (3" to 4-1/4" dia.) (remove)
    * Cilantro, raw, 3 tbsp (remove)
    * 365 Organic Diced Tomatoes, 1.50 cup (remove)
    * Diamond Crystal - Kosher Salt, 4 tsp (remove)

Directions

cut cauliflower into 1/4 florets & peel and dice potatoes into 6-8 pieces each. measure out spices & oil and have them next to stove. heat oil over medium-high heat in a deep heavy bottomed pan. add cumin seeds and fry unil dark brown (20 seconds). add cumin powder, corriander, turmeric and red pepper and stir for a moment. Immidiately add cauliflower & potatoes and fry stirring until veg being to sear (5 mins). add tomatoes and fry until sauce thickens and fat separates. add 3 cups boiling water and salt. reduce heat & simmer covered until veg are tender (15 mins). add peas and continue cooking for 5 mins. sprinkle with cilantro & serve.
