Introduction

Different twist on my Spiced Butternut Soup. This one is dairy free, more rice, skipped the sugar. Different twist on my Spiced Butternut Soup. This one is dairy free, more rice, skipped the sugar.
Number of Servings: 10

Ingredients

    Butternut Squash, 6 cup, cubes
    *Sweet Potato, baked, 2 cup
    *Nishiki Brown Rice, 2 serving
    Onions, raw, .5 cup, chopped
    Garlic, 3 cloves
    *Better Than Cream Cheese (non-hydrogenated) [Tofutti], 8 tbsp
    Ginger, ground, 1 tsp
    Cloves, ground, .25 tsp
    Allspice, .13 tsp
    Cinnamon, ground, 1.5 tsp

Directions

Cook the squash/sweet potato until soft. Nishiki rice can be added either before or after heating the Nishiki bowl. Add all ingredients to a large pot or crock pot and let them simmer for 15-20 minutes or longer until all ingredients are easy to mix. Place mix into a food processor or blend or use an immersible to puree. Then add water or broth to desired consistency. Makes 8-10 1 cup servings.
