Cornmeal, shredded cabbage, shredded carrots, buttermilk (or milk and lemon juice), cheese, etc Great with soup!
Directions
Preheaat oven to 425. Grease 9x13 inch pan-metal or pyrex. Whisk cor=nmeal, flour, baking pwder, baking soda, sugar and salt in a large bowl. Beat together eggs, buttermilk (if you don't have buttermilk, make it with 1tbsp lemon juice to each cup milk), and melted butter and oil. You can just use oil if you want to avoid the saturated fat. Add the liquids to the dry. Add veggies and cheese and stir until just combined, Pour into a lightly oiled pan. Bake for 35 minutes or until a knife or toothpick inserted in the center comes out clean. Cool for 15 minutes in pan on wire rack. Cut into 12 squares.
