Introduction

This is a great easy vegitarian or vegan dinner! This is a great easy vegitarian or vegan dinner!
Number of Servings: 2

Ingredients

    2 Tbsp. Extra Virgin Olive Oil
    4 cloves garlic
    1 large yellow onion
    2 yellow squash
    1/3 cup cooked brown rice
    1 tsp Salt
    1/2 tsp Pepper
    1 can (15 oz) Black Eyed Peas (drained)
    1/2 cup Vegetable Broth
    1 tsp chipotle tabasco sauce (optional)

Directions

Place one measure brown rice in a pot. Add 2 1/2 measures water. Bring to a boil. Cover and reduce heat to lowest setting and cook for 45 minutes.

Place the oil, diced onion, diced squash, garlic, salt and pepper in a dutch oven and saute (stiring frequently) until the onion is browned.

Stir in the cooked rice and one can of black eyed peas (drained). Lower the heat, cover and cook for 4 minutes. Add the hot sauce individually in bowls.
